Ingredients

  1. 1pork fillet, approx1 lb
  2. 1 tbspvegetable oil
  3. 1/2 pintschicken stock ( 10 fluid ounces) U.K pint!
  4. 1 tbspsoy sauce
  5. 4 ozmangetoute cut into lozenges
  6. 2spring onions (scallions) sliced diagonally
  7. 1 tspcornflour (starch)
  8. 4 ozraw cashew nuts

Cooking Instructions

  1. 1

    Place cashews in heavy base pan and toast over medium heat.stir constantly until golden. Put to one side.

    Cut pork into 1cm cubes or 1/2 cm slices

  3. 3

    Heat oil on medium heat in wok or frying pan, add pork and fry until sealed and golden on all sides

    Add stock & soy sauce and bring to low simmer

  5. 5

    Add mangetoute & spring onions cook for 1 minute, they should still be crunchy.

    Slake cornflour with 2 tablespoons water, add to pan and bring to boil,stirring constantly, the sauce is more of a glaze than a runny sauce.

    Add cashews, stir through and serve.straight away.

    Serve with rice or noodle dish of choice.

    This also works with chicken breasts or boneless thighs.

When I left school I trained as a chef,worked in 5*London hotel for a few years.Drifted into transport planning,retired, do most of the cooking at home.Now have more time to play (experiment) in the kitchen, like to add my own twist to recipes ( my wife calls it 'tampering'!) bake bread and make / decorate novelty cakes for family and close friends.Two daughters and three grandchildren. Celebrated Ruby wedding anniversary with wife Pam 2014.
