Its not unusual to find a pot of githeri on fire on lazy Saturday evenings or any other day.Its easy to cook and sweet when cooked right.my recipe is pretty basic since it reminds me of my grandmother's githeri which was the best.I miss it whenever I eat it elsewhere

Mix the maize n the beans in a pot

Thoroughly wash

Cook on sufficient amount of heat until both the maize n beans are tender to your liking

In a different pot put sliced onions and the grinded garlic

Saute until golden brown

Add the sliced tomatoes

Cook until it becomes a thick paste

Add the sliced green pepper and chilli

Cook for a few minutes

Add the chopped potatoes and cook until tender

Add the mixture(githeri) to the well cooked thick spiced sauce after draining its water

Let it simmer for a few minutes while stiring

Add chopped coriander and lift the pot off the fire

Let it sit for a few minutes

Stir and serve hot
