This is a meal that most if not all Kenyans have eaten. Its not unusual to find a pot of githeri on fire on lazy Saturday evenings or any other day.Its easy to cook and sweet when cooked right.my recipe is pretty basic since it reminds me of my grandmother's githeri which was the best.I miss it whenever I eat it elsewhere

Ingredients

11/2 hours
2 servings
  1. 2 cupsdry maize
  2. 3 cupsdry beans
  3. 11/2 litrewater
  4. Salt
  5. Onion
  6. 3 tablespoonsoil
  7. 1 bunchcoriander
  8. Green pepper
  9. Chilli
  10. 2gloves grinded garlic
  11. 3tomatoes
  12. 5potatoes

Steps

  1. 1

    Mix the maize n the beans in a pot

  2. 2

    Thoroughly wash

  3. 3

    Cook on sufficient amount of heat until both the maize n beans are tender to your liking

  4. 4

    In a different pot put sliced onions and the grinded garlic

  5. 5

    Saute until golden brown

  6. 6

    Add the sliced tomatoes

  7. 7

    Cook until it becomes a thick paste

  8. 8

    Add the sliced green pepper and chilli

  9. 9

    Cook for a few minutes

  10. 10

    Add the chopped potatoes and cook until tender

  11. 11

    Add the mixture(githeri) to the well cooked thick spiced sauce after draining its water

  12. 12

    Let it simmer for a few minutes while stiring

  13. 13

    Add chopped coriander and lift the pot off the fire

  14. 14

    Let it sit for a few minutes

  15. 15

    Stir and serve hot
