Mlima and pilau

It was my first time preparing mlima. It can be challenging if you are not up to the task but it is very satisfying. It basically very large chunks of beef prepared into a stew. I served mine with pilau and chapati. Though I only have the recipe for the mlima and pilau it is very satisfying.

Steps

Chop the beef into fairly large pieces and wash.

Place in a large sufuria add2cups water and salt.

Turn on heat to max level and set to cook until soft. You can add meat tenderiser if the beef is very tough.

When cooked make sure all water is finished then set aside.

Place onions in a sufuria and add cooking oil stir and when they start turning brown add tomatoes.

Cover for the tomatoes to soften. When soft crash them add the beef and stir.

Add royco and beef cubes and salt. Add 2cups water and cover for 5minutes then set aside.

Place garlic, ginger and sufuria. Add 70ml cooking oil and stir.add pilau masala too.

Starting to turn brown add capsicum, make sure to chop into very small pieces, keep stirring.

Add tomatoes(1 large one) and stir then reduce heat a little as wait for tomatoes to soften. Boil 7cups of water as you do this

Add salt then the boiled water. Add the rice turn heat to medium level. Let it cook

When water is almost finishing cover so you don't have to add any more water. When cooked turn off heat and serve.
