An old friend of mine showed me this recipe many years ago and I've hardly bought syrup since! So simple and easy to make in varying quantities. Easily double, triple, or halve the recipe by using the general rule: 1 part water, 2 parts sugar. For my family breakfasts I make a large batch and keep the leftovers.

An old friend of mine showed me this recipe many years ago and I've hardly bought syrup since! So simple and easy to make in varying quantities. Easily double, triple, or halve the recipe by using the general rule: 1 part water, 2 parts sugar. For my family breakfasts I make a large batch and keep the leftovers.

Stir sugar and water together in a small saucepan and heat until sugar is dissolved. Avoid boiling as it can cause syrup to foam or froth up and sometimes crystallize.

Add maple extract. Serve warm. For thicker syrup, allow to cool. Store leftover syrup in an airtight container for up to 4 days.
