Emma's Shortbread

I have had trouble finding a shortbread recipe that isn't bland. So I found a traditional recipe which I tweaked, and came up with this!

Steps
- 1
Dice your butter or margarine, and mix it with the sugar, either by hand or with an appliance.
- 2
Add the flour, vanilla extract, and water.
- 3
Mix until you have a smooth dough. Wrap the dough in clingfoil, and refridgerate for 30 minutes.
- 4
Take out your dough and place it on a floured surface. Sprinkle some flour on top of the dough and then add some to a rolling pin.
- 5
Roll out your dough so it is roughly 1,5cm/1in thick.
- 6
Cut your cookies into "bars" and just make a pattern on them with a fork. Do NOT go all the way through the cookie, just press down very lightly with the fork.
- 7
Line a baking tray with some parchment paper or baking paper or the equivalent.
- 8
Put your cookies on the baking tray and sprinkle lightly with caster/granulated/refined sugar.
- 9
Bake in the oven at 190 celsius/350F for roughly 12-18 minutes or golden.
- 10
Take them out from the oven and let them cool on the tray for about 3-4 minutes.
- 11
Transfer to a wire rack and let them cool completely. Enjoy!
