Eggplant Moutabal
One of the most delicious and tasty appetizers
Steps

Wash the eggplant and dry it, then grill it over gas or charcoal as desired.

Mash the garlic and squeeze the lemon over it.

When the eggplant is cooked, remove it from the heat and place it in a bowl of cold water.

Peel the skin off the eggplant.
- 5
Add the eggplant to the garlic and lemon, and mash well.
- 6
Add salt and tahini, and mix well.
- 7
Place in a dish and drizzle olive oil on top.

Serve with fried foods and other dishes.
