Ingredients

  1. pancakes
  2. 1 cuporganic 7 grain pancake mix
  3. 1egg
  4. 2 tbspcoconut oil (melted)
  5. 1 cupmilk
  6. 2 tbspchia seeds
  7. 1/2 cupdried blueberries
  8. syrup
  9. 2 cupmixed berries (i use frozen blueberries, strawberries, and blackberries
  10. 1/4 cupwater
  11. 1/4 cupsugar

Steps

  1. 1

    Put all of the syrup ingredients into a sauce pan and boil on medium high heat

  2. 2

    Mix all pancake ingredients in a bowl and let sit for 10 minutes (the chia seeds will soak up the extra milk)

  3. 3

    Cook pancakes on an ungreased, medium heat pan, flip them when bubbles start popping on the top

  4. 4

    Cook your syrup until it thickens on its own, crushing the berries as you go. For a smoother syrup use an immersion blender

  5. 5

    Serve and enjoy ( I prefer to use all organic ingredients. The chia seeds add protein and omega fatty acids)
