Kansas City BBQ Sauce

My sauce adventures continue with Kansas City BBQ sauce. This is a thick, sweet and tangy sauce. Because of its thickness it tends to sit on top of the meat rather than bake in much. The high sugar content can cause it to burn over hot coals, so best brushed on in the latter stages of grilling.

This is a copycat recipe from Todd Wilbur's recipes. It uses many of the ingredients I have used in previous sauces, yet still has a unique taste. With this method you are essentially making the ketchup from scratch and bbq flavouring it. Enjoy aldo -
