Was looking for a way to incorporate more protein into my breakfast with a savory note. This is it! Very filling and a quick way to add protein and fiber to your diet.

Beat the eggs in a bowl with heavy whipping cream and the salt &pepper until well combined.

Spray a small skillet with non stick cooking spray. Over low to medium heat stir eggs continuously until almost set about 3-4 minutes.

Break up the Gouda slices into small pieces to layer on top of eggs covering the entire pan. Stir again to incorporate cheese into the eggs. Keep stirring until almost set.

Add black beans and cook until beans are heated throughly and cheese is melted. Serve immediately with whole wheat toast or fresh fruit on the side.
