Ingredients

  • 3 cupvegetable stock or Chicken stock(you could use broth but stock has more flavor)
  • 1 1/2 cuplong grain rice
  • 1/2 cupfresh parmesan cheese grated
  • 2 tbspolive oil, extra virgin
  • 4 tbspbutter
  • 1/4 cupfresh parsley chopped or torn small
  • 1the juice of 1 lemon
  • 2 tsplemon pepper seasoning
  • 1 tspchopped garlic
  • 1salt to taste

Steps

  1. 1

    Bring your vegetable stock to a boil and pour in the rice. Turn the heat down to simmer, and simmer for roughly 20 minutes with the pot lid on.

  2. 2

    Remove the lid and add all remaining ingredients and continue to simmer on low for about 5 minutes. Continue to stir so rice doesn't stick. Fluff with a fork and serve!
