Preheat oven 425° Fahrenheit

Wash tomatoes. Cut in half lengthways. Scoop out the inside of tomatoes, and add to eggplant mash.

Fill the hollowed out tomatoes with the eggplant mash and tomato mixture.

Add cheese on top bake for 35 -40 minutes. Let sit 5 minutes serve, hope you enjoy!
