I was at work, talkin bout food, and this popped into my head. Simple meat that goes with rice, potatoes, or if you're a carnivor like me, just eat it by itself. This is a powerful Mexican/American fusion.

1Boneless Skinless Chicken Breasts
1Pepper jack cheese
1chopped onion
1chopped red bell pepper
1chopped green bell pepper
1Seasoning salt
1black pepper
1cornbread stuffing
1Bacon

Make stuffing. (stove top is fine)

Butterfly the chicken breast, then season both inside and out.

Stuff with all ingredients

Fold the chicken over and wrap with bacon.

Place in oven pan or dish. Bake at 380° for an hour (or until bacon is crisp)
