This is a tasty and satisfying Mediterranean inspired lunch wrap! To make it more appealing to meat eaters I recommend adding cooked lamb.

This is a tasty and satisfying Mediterranean inspired lunch wrap! To make it more appealing to meat eaters I recommend adding cooked lamb.

Slice up your vegetables! The cucumber slices should be fairly thick; quarter them like a pizza. Dice the tomato. Slice each kalamata olive in half lengthwise. If your feta chunks are very large, I recommend chopping them up smaller.

Lay out your wrap and spread the pesto out.

Add all your veggie ingredients and the feta. I like to layer it with the arugula first, followed by the cucumber and tomato, olives, and topped with the feta.

Add the olive oil and other seasonings evenly across the top of your veggie fillings.

Wrap the whole thing up like a burrito! Pull the sides together close but not touching. Then life the bottom and tuck like you're wrapping a gift. Finally, roll the whole thing together tightly and you've got your yummy finished product!
