I always wondered how to get my chicken roasted with crispy succulent skin. I ditched the olive oil and picked up the mustard. It's crispy bliss.

P.s don't worry you won't taste the mustard. The mustard acts as the oil and holds the seasoning to the skin better. Cutting out the backbone will ensure faster and even cooking.

  • 1whole chicken
  • cajun seasoning
  • 1 1/2 tbspstone ground mustard

    Preheat oven to 375°F

    Remove the backbone of the chicken with a sharp knife or kitchen shears.

    Season inside the chicken with Cajun seasoning.

    Place the chicken (skin side up) on in a roasting pan or cookie sheet lined with parchment paper.

    Pat dry the skin with paper towel.

    Rub on mustard to coat the skin.

    Season the chicken with Cajun seasoning.

    Bake the chicken for 45 minutes to 1 hr. Internal temperature should be 165°f. The crust will also be golden brown.

    Let the chicken rest for 5 minutes. ENJOY
