Cooking Instructions
- 1
Slice the plantain in half. Fry for about 2 minutes on each side. Take out, flatten making sure to keep the plantain intact. Return to the oil and fry until golden, season with salt and set aside.
- 2
Rub the sofrito all over the steak, season with badida or your favorite Hispanic seasoning salt and cook in a skillet or griddle until done.
- 3
Spread Mexican mayo on the plantain like you would a piece of bread. Place the meat evenly, and assemble the veggies. Serve and enjoy! I get my thin cut steak from the Mexican store in my area. If you don't have one in your area you could always go to your local butcher and ask them to show it for you. I believe the steak I get is called Bistek de rez.

Coquito Coquito
I have tried many recipes and methods for making coquito. I think it tastes so much better when made with egg yolks. This recipe has gone through a lot of trial and error but I think I nailed it. I recommend making this recipe in 2 batches, with the ingredients split down the middle.*I have been using Magdalena white rum for years, but feel free to use any other rum you prefer.* Care73 -

Tamal Jarocho Tamal Jarocho
Tamal Jarocho, as it's called outside Veracruz, is a soft tamale made with already-cooked masa. It's delicious and popular in states like Puebla or Mexico City (where it's also called Tamal Jarocho), but it's hard to find it made well outside Veracruz. So, for those outside Veracruz and Mexico, here is the recipe.rodrigo
