Ingredients

  • 8corn tortillas, cut into pieces
  • 1 tbspcooking oil
  • 4puya chile peppers, toasted and seeded
  • 1guajillo pepper, seeded and quartered
  • 2roma tomatoes, quartered
  • 1 tspsalt
  • 1 clovegarlic
  • 1/2onion, chopped
  • 4 ozchorizo
  • 1poblano pepper, toasted, seeded, peeled, chopped
  • 2eggs, beaten
  • 1 tbspcilantro, chopped
  • 1/4 cupcojita cheese

Steps

30 mins
  1. 1

    Fry tortillas in oil until golden brown. Set aside.

  2. 2

    In a pot, place tomatoes, puya peppers, gaujillo peppers and salt. Cover with just enough water and boil.

  3. 3

    Saute onions in same pan then add chorizo and brown.

  4. 4

    Place tomatoes & peppers from pot into blender along with garlic and some of the boiled water and blend into smooth sauce.

  5. 5

    Add poblano pepper, sauce and tortilla in pan and cook at low temp. Cook until well incorporated.

  6. 6

    Add eggs and cook until eggs are done. As cilantro.
