Peel, cube and wash yam. Drain and set aside.

Wash pepper and tomato and cut onions. Put in a blender with your crayfish and 2 cube seasoning and 1 tablespoon salt. Coarsely blend.

Heat pan. Add palm oil then fry the coarsely blended Tomato. Crush in the remaining season. Check taste then add salt if needed.

Pour in the yam. Add water to cover the yam and allow to cook.

Shred Spinach and set aside. When yam is well cooked. Mash up then add Spinach and cook for 3minuts. Take off the heat. Allow to rest for 5minutes.

Serve and garnish with fresh Basil and Mint leaves.
