Ingredients

  • 4pks. Large Mushrooms
  • 1/2lb. ground Sausage
  • 6Green Onions, sliced
  • 1pk. fresh Spinach, chopped
  • 1/2green Pepper, minced
  • 1 1/2cup Breadcrumbs
  • 2cups shredded Cheddar Cheese
  • 1tsp. each Salt and Pepper
  • 1/2cup Mayo
  • 1/2cup Parmesan cheese
  • 1shredded Cheddar cheese (optional)

Steps

  1. 1

    Wipe clean mushrooms, remove stems. Set aside.

  2. 2

    Brown sausage in fry pan. Place in bowl, reserve fat.

  3. 3

    Add vegs. to pan with fat and saute, 10 mins.

  4. 4

    Add to bowl. Let cool slightly.

  5. 5

    Add remaining ingredients except parm. cheese. Mix well.

  6. 6

    Stuff mushrooms and place in greased pan. Sprinkle with parm cheese (and extra cheddar).

  7. 7

    Bake 400° for 30 mins., until browned.
