First take a bowl add karela, water and salt keep it aside for 30min..

After 30 min wash it then put this in plate to dry.

Take a pan add oil then add hing saute then add karela fry for 1min..

Add turmeric powder and fry for 5min to soften the karela..

Take another pan add cumin seeds, carom seeds, fennel seeds and fenugreek seeds dry roast it and keep it aside to cool..

When it cool completely make a dry coarse mix..

Check karela mix it once again then turn off the flame... Add masala mix, salt, black salt,gram masala and red chilli mix it well..

Cover the pan and keep it aside to light cool.. Then add vinegar mix it..

Karela ka aachar is ready to serve serve it with pratha, puri etc.. (If you want long life of aachar then put it on sunlight for 2_3days)
