Ingredients

  • 2 tablespoonspeanut oil; divided
  • 1 lbboneless skinless chicken thighs, chopped
  • 2shallots finely chopped
  • 4garlic cloves, minced
  • 2green 1 red Thai chili (chopped & muddled)
  • 2 tablespoonsfish sauce
  • 2 teaspoonsdark soy sauce
  • 2 teaspoonsbrown sugar or palm
  • 1 bunchThai basil leaves
  • 1/2 teaspoonground white pepper

Steps

  1. 1

    In a large wok, heat 1 tablespoon of oil; cook chicken. Set aside on a plate when done. Do not drain

  2. 2

    Reheat wok with remaining oil. Cook shallots and garlic for 3 minutes

  3. 3

    Return chicken to wok and add chilies, fish sauce, soy, and sugar. Cook on high for about 8 minutes

  4. 4

    Throw basil and white pepper in and cook till the basil is wilted

  5. 5

    Serve over white rice. Enjoy!
