Have all ingredients ready. Pre heat a medium skillet at medium heat over stove. Lightly brush bottom of skillet with olive oil. I used a garlic infused olive oil.

Place 1 tortilla in skillet. Sprinkle 1/4 cup of shredded cheddar and 1/4 cup shredded pepper jack cheese evenly one tortilla.

Add chicken and bacon on top of cheese. Evenly sprinkle remaining cheeses on top of meat.

Top with second tortilla. Place a lid on top of skillet for 1 minute to melt cheese (it will be easier to flip this way). Remove lid.

After the bottom tortilla is crispy and brown, gently flip the quessadilla. Once both sides are crispy and brown, remove rom the skillet.

Wait approximately three minutes and cut the quessadilla into 4 pieces.

Serve with your favorite mexican toppings!
