Ingredients

  1. 1 tbspextra virgin olive oil
  2. 1 cuporzo pasta
  3. 1 mediumzucchini, grated
  4. 1 mediumcarrot, grated
  5. 1zest of 1 lemon
  6. 1 can14.5 oz chicken or veggie broth
  7. 1 1/2 tsplemon thyme or reg thyme
  8. 1parmesan, optional

Steps

20 mins
  1. 1

    in Medium sauce pan heat oil on Med hi

  2. 2

    add cup of orzo, cook until lightly toasted, 2 min

  3. 3

    add zucchini and carrot, cook two mins

  4. 4

    add broth and zest

  5. 5

    bring to boil cook 10mins and until broth is absorbed

  6. 6

    stir occasionally

  7. 7

    stir in thyme and parmesan
