  1. 100 gramsRaisins
  2. 1 1/4 cupBrandy
  3. 600 gramsBread, cut into chunks
  4. 100 gramsSultanas
  5. 50 gramsFruit & Nut Mix
  6. 1 tspButter
  7. 1 1/2 pintsFull Cream Milk
  8. sauce
  9. 2 cupsvanilla Ice Cream
  10. 1 tspBrandy
  11. 1 tbspMaple Syrup
  12. 4 tbspEvaporated Milk

    Soak the raisins in the brandy in a sauce pan for an hour before.

    In a jug, add the vanilla ice cream and 1 tablespoon of syrup and mix.

    Then as it melts, add the teaspoon of brandy and the evaporated Milk. Stir in and you have a pouring ice cream sauce for the bread pudding. Keep in the fridge until your ready to serving.

    Cut up or tear up day old bread enough to near fill the a greased oven dish and mix in sultanas, and fruit & nut.

    Slowly bring the milk to the boil.

    Put the pan of sultanas soaked in brandy on the heat, mix in butter, then pour in milk. Bring to the boil and just before it bubbles, turn to low

    Pour the milk and raisins mixture all over the bread mix

    Place it uncovered in a preheated oven on 180°C, stir after 15 mins, turn it over with a spoon. Then carry on baking for another 20 minutes, or until it has absorbed all the milk and has a nice golden crust on top

    After 20 mins it should of soaked all the milk mix up. If its still bubbly and wet, turn it over again and put back in the oven for 5 minutes.

    Take it out let cool. Then serve in bowls with the ice cream sauce. You could dress the top with peaches for extra flavour. Or just plain.

Cookpad founder Member Ambassador, Also a Cookaholic.I love this Cookpad Site, Recipes, friends, interesting people and outstanding recipes, and able to see and to taste food from all over the world. i have learned so much more here, spices , herbs and lovely recipes of different cultures. also experimenting mixing different herbs and spices and making my own creations .I have cooked for my family since I was 14yrs, home from school as my Grandmother could no longer cook she was 91yrs, my Dad worked and there was only me so I learned quite quick and have always enjoyed it. I only started experimenting with herbs and spices and items I had never heard of before through joining Cookpad 2014 and I'm still learning new things. It is a passion of mine and I always invite my family around so I can create something new for them to try. my children grew up learning lots from me I have 3 daughters all with their own families and two Sons one who cooks for his family also my youngest son who is still at home with me,he comes up with some lovely meals and ideas so I'm proud of them all. 💜
