Tuna Melt Dip

This came about because I wanted to make tuna melt lettece wraps but needed a way to make them to eat as soon as the hot tuna and cheese was scooped in the lettece cup so it would keep the lettece crisp for everone. This worked out so well that the next time I made it I added various dipping items and crackers and rolls so everone was happy. This makes an easy fun lunch or appetizer!

Ingredients

  • TUNA
  • 26 ounce cans albacore tuna packed in water, drained
  • 1small shallot, finely chopped
  • 2 tbspcelery, finely chopped
  • 1/4 cupSpicy Ranch Dressing , recipe for mine attached in direction step #2
  • 1 tspfresh lemon juice
  • 1 tspchopped fresh chives
  • 1 tspchopped fresh parsley
  • 1/4 tspblack pepper and salt to taste
  • 2 tbspgarlic and herb flavored cream cheese, at room temperature
  • 1 cupItalian four cheese blend, divided use
  • 1/4 cupbuffalo flavored cheese, shredded or pepper jack if you can't find buffalo flavored
  • 3strip of bacon, precooked until slightly crisp
  • 1/4 cupchopped fresh tomatos
  • DIPPING IDEAS
  • celery sticks
  • carrot sticks
  • crisp lettece cups
  • fresh button mushrooms
  • crackers
  • French rolls, halved or split

    Preheat oven to 400. Spray a baking dish big enough to hold tuna mixture in with room to allow for bubbling.

    Combine tuna, celery, shallot, spicy ranch dressing (recipe attached below), lemon, chives, parsley, pepper and 1/2 cup of the Italian cheese and the cream cheese. Mix well

    Place mixture in prepared baking dish.top with remaing italian cheese blend, and buffalo flavored cheese. Add bacon, cut up on top of chesses. Bake until bubbling, and cheese is melted, about 15 to 20 minutes. Add chopped tomatos to top before serving

    Serve with your choice of dipping ideas. Have a spoon for filling lettece cups and rolls

“Fenway” passed away on 2/3/2021. For the last year she tried to teach her husband of 42 years how to cook like her. Although I will never be as good of a cook as her she did pass on her passion for cooking. Therefore, I will attempt to carry on her legacy and maintain/update her site. My wife was a Registered Nurse, a licensed deep water aerobics instructor, a mother to our 2 children and a fantastic cook. We grew up in New England but have been fortunate to live all over the US. I am now retired, missing her terribly, but thankful for all the years we had together and all her cooking lessons.
