A cube of fresh yeast nearing its expiration date, rainy weather—how about making a delicious snack (with apples cooked with cinnamon)? And there will be some left for breakfast!

Warm the milk until just lukewarm (not too hot!). Crumble the yeast into a small bowl and dissolve it with a little of the milk.

Mix the remaining warm milk with the melted butter and sugar.

In the bowl of a stand mixer fitted with a dough hook, add the flour, dissolved yeast, eggs, and salt. Knead for 10 minutes.

Generously butter a kougelhopf pan. Place a whole almond at the bottom of each groove, add the dough, and let it rise for 2 hours in an oven that has been preheated to 120°F (50°C) and then turned off. After 2 hours, remove the pan and preheat the oven to 350°F (180°C). Bake for 30 minutes at 350°F (180°C), then reduce to 320°F (160°C) and bake for another 30 minutes. Bake for less time if using a metal pan instead of a traditional ceramic one.

Let cool before removing from the pan, then dust with powdered sugar. Enjoy!

If you don’t have almonds, that’s okay! It’s still delicious.
