1/2 tspdry sherry
2 tbspminced onion
4 tbspolive oil, extra virgin or vegetable oil
4 cupcooked rice
1 1/2 tspsalt
1/2 cupfrozen green peas

Mix eggs and sherry

Pour oil in pan heat

Stir in minced onion and egg

Scramble the eggs into small pieces

Add rice salt and peas and stir constantly 8-10 minutes or until everything is heated through
