Ingredients

5-6 servings
  1. 1/2 kgcarrots / gajar
  2. 1/2 literor 2 cups milk
  3. 1/2 cupsugar
  4. 3-4elachi/ cardamom
  5. 1/2 cupkhoya/ mawa
  6. 2 tbspsghee
  7. Handfulmixed nuts pista, cashew and almonds

Steps

  1. 1

    Wash carrots thoroughly under running water. Peel and grate them.

  2. 2

    Add milk in a kadhai or pan and bring it to a boil. The milk will start to thicken as it evaporates.

  3. 3

    Turn the flame to a low to medium setting. Add the grated carrots to the milk.

  4. 4

    Keep stirring this mixture often. The milk will slowly begin to froth & dry.

  5. 5

    Then add mava and mix well.

  6. 6

    When the milk has almost dried out, add 4 tbsp ghee and roast the mixture in it.

  7. 7

    Add sugar, mixed nuts and cardamom powder. Keep stirring till the mixture thickens.

  8. 8

    Gajar Ka Halwa is ready.
