Patatas Bravas (vegan)
A Spanish tapas dish that is just as good served as a side with meats like beef and chicken.
Cooking Instructions

Scrub the potatoes under cold water and cut any bigger ones in half

Bring a large pot of water to the boil
- 3
Gently warm half of the olive oil in a small fry pan and add the garlic. Allow it to infuse the oil over a very gentle heat for at least five minutes, then scoop the garlic out and discard it

Into the oil, again on a low heat, stir in the tomato puree/paste, cayenne, paprika, maple syrup, vinegar and salt and stir it until it has all combined with the oil. Taste and adjust to taste.

Remove the sauce to a small bowl and allow to cool.

Boil the potatoes for 15 minutes or until tender, then drain and allow to cool.

Heat the other 2 tbsp of oil in a large saute pan, and add the potatoes.

Fry the potatoes until crisp and deeply golden, remove onto a plate with kitchen paper on it, sprinkle with a good pinch of sea salt and serve them with the tomato sauce, either on the side for dipping or poured all over the top.

Patatas bravas--crispy potatoes served with a spicy, paprika-forward tomato sauce--are standard fare at any tapas restaurant. As simple as they are to make (and they really, really are simple), there's a lot of variation in the method. The recipe below includes my personal preferences. I use mini creamer potatoes, first because I like the texture, and second because they're easier to prep (i.e. just cut 'em in half). Next, I shallow fry my patatas. Again, this is for simplicity. I see no reason to pull out the deep fryer just to crisp up a few potatoes. Lastly, I like to mix a little mayo into the bravas sauce. I find it rounds out the flavour. Of course you can omit this step, or serve the mayo separately (or better yet, make homemade spicy aioli). However you make them, patatas bravas make for a delicious starter to a meal.
