Ingredients

  • 1 cupcooked Basmati rice
  • 2finely chopped tomatoes (medium size)
  • 1chopped onion
  • 1/2 tspgrated ginger
  • 1/4 tspasafoetida (hing)
  • 1bay leaf
  • 1cinnamon stick (2 inches approx)
  • 7-8roughly chopped curry leaves
  • 1/2 tspwhole cumin seeds
  • 1/2 tspmustard seed
  • 1/2 tspturmeric powder
  • 2slitted green chilli
  • 1 tbspchopped cilantro/ coriander leaves
  • 2 tbspcooking oil
  • to tasteSalt

Steps

  1. 1

    (At times of cooking rice, mix a teaspoon of salt and a teaspoon of oil)

  2. 2

    Heat oil in a non-stick pan; add bay leaf, cinnamon stick, cumin seeds, mustard seeds, and hing; saute over medium heat until the seeds begin to crackle.

  3. 3

    Add chopped onion, curry leaves, and green chilies; saute for a few minutes. Add grated ginger and turmeric powder and saute for a minute.

  4. 4

    Add chopped tomatoes and salt. Saute for a minute. Then cover the lid and cook till the tomatoes become soft.

  5. 5

    Now saute the tomato masala till it leaves oil.

  6. 6

    Add rice to the masala and mix it gently. Cover and cook for 2 minutes.

  7. 7

    Add chopped cilantro and mix gently.

  8. 8

    Serve hot with papad. (And.B. No extra water)
