I did not have salsa and did not want to go to the store so i went to the cabinet and came up with this. you can use cilantro if you have it, i did not so i used what i had. i also do not like chunky salsa so if you like chunky salsa you can use regular diced tomato or skip the blending step and juct chop the jalapeno

Ingredients

  1. 3 canpetite diced tomato no salt added
  2. 3 mediumfresh jalapeno
  3. 1 cancorn
  4. 1 canblack beans
  5. 1 cantomato sauce
  6. 1 tbspgranulated garlic
  7. 1 tbspdried parsley
  8. 1 tbsplime juice
  9. 1/2 tbspsugar to cut the acidity of the tomato a bit
  10. salt
  11. pepper

Steps

  1. 1

    empty 2 cans of tomato into a blender

  2. 2

    add the jalapeno. seeds and all if you like it hotter or no seeds if you like it milder and blend it all up to your desiered considency

  3. 3

    empty third can in large bowl and add the tomato sauce

  4. 4

    rinse the corn and beans and add to bowl

  5. 5

    add the contents of the blender to the bowl

  6. 6

    add the spices and lime juice and mix it all up real good with a large spoon being careful not to break up the beans

    cover and store in fridge for a few hours to let the flavors blend and mellow out

    this will keep for up to 2 weeks depending on how its stored or you can can it
