Ingredients

  • 1 boxLinguine
  • 2 tbspOlive Oil, divided
  • 2Eggs, beaten
  • 1/2 tspRed Pepper Flake
  • 1Zucchini, diced
  • 3 cloveGarlic, minced
  • 2 tbspBrown Sugar
  • 1/3 cupSoy Sauce
  • 2 tbspSriracha
  • 2Ginger, two inches grated
  • 5Green Onions, chopped
  • 1 bunchCilantro, chopped

Steps

  1. 1

    Cook linguine according to box instructions. Drain and set aside.

  2. 2

    Combine brown sugar, soy, sriracha, and ginger. Whisk well.

  3. 3

    In a large pot over medium heat add 1 tbsp olive oil, eggs, and red pepper flakes. Stir to scramble eggs. Set aside.

  4. 4

    In a large pot add 1 tbsp olive oil on medium heat. Add zucchini and garlic. Sauté for 5-6 mins.

  5. 5

    Turn heat to low. Add pasta and eggs to pot. Pour sauce mixture over top. Stir and Make sure noodles are totally coated.

  6. 6

    Add cilantro and green onions. Stir to combine.
