This is a versatile dish. Substitute your favorite veggies in the sauce. The sauce can be eaten like a thick vegetable soup, if there is any left over.

Cut the chicken into chunks and sprinkle with salt and pepper.

Heat butter in a large high-sided skillet over medium heat.
Cook the chicken, 3-5 min. per side, until golden.
Remove the chicken and set aside. - 3
Add the onions to the pan.
Cook 5 min. stirring occasionally until tender, not browned. - 4
Stir in flour, cook for 1 min.

Reduce heat to medium-low.
Whisk in chicken broth.
Whisk constantly and bring to a boil. - 6
Add carrots, thyme, pepper, salt, peppers, and sweet potato to the pan.
Reduce heat to low.
Cover tightly and cook for 20-30 minutes - 7
Stir in milk and serve.
