  1. Chicken
  2. 3 1/2 lbChicken
  3. 1/2 stickButter
  4. Sauce
  5. 1 1/2 cupChopped onions
  6. 1/3 cupFlour
  7. 1 3/4 cupChicken stock/broth or water
  8. 3 mediumCarrots, diced
  9. 1/2 tspDried thyme
  10. 1/2chopped sweet potato
  11. 2Chopped bell peppers
  12. 1/2 tspblack pepper
  13. 1 tspsalt
  14. 1/4to 1/2 cup milk

Steps

  1. 1

    Cut the chicken into chunks and sprinkle with salt and pepper.

  2. 2

    Heat butter in a large high-sided skillet over medium heat.
    Cook the chicken, 3-5 min. per side, until golden.
    Remove the chicken and set aside.

  3. 3

    Add the onions to the pan.
    Cook 5 min. stirring occasionally until tender, not browned.

  4. 4

    Stir in flour, cook for 1 min.

  5. 5

    Reduce heat to medium-low.
    Whisk in chicken broth.
    Whisk constantly and bring to a boil.

  6. 6

    Add carrots, thyme, pepper, salt, peppers, and sweet potato to the pan.
    Reduce heat to low.
    Cover tightly and cook for 20-30 minutes

  7. 7

    Stir in milk and serve.
