  • 3 lbred potatoes; quartered
  • 1/2 cupdried mango; medium dice
  • 1 tbsponion powder
  • 1 tbspgarlic powder
  • 1 tbsppaprika
  • 1/2 cupmayonnaise
  • 8 ozKraft Chipotle Mango dressing
  • 1/3 cuprice vinegar
  • 1orange bell pepper; small dice
  • 1red bell pepper; small dice
  • 3shallots; minced
  • 1cilantro; chiffonade
  • 1 bunchscallions; cut on bias
  • 1salt and pepper

    Cover potatoes with cold water. Add salt. Boil until fork tender. Drain. Cool down in fridge.

    Combine mayo, salad dressing, and vinegar. Add dried spices, salt, and pepper.

    Add potatoes, veggies, scallions, and cilantro. Toss.
