Easy Potato & Veggie Skillet

I love my cast iron skillet. Something about cooking food in it makes it that much more delish! I make several versions of this using sweet potatoes, butternut squash etc. Options are literally endless. I used bacon fat in this to add that deep delish,rich flavour. The parsley adds the freshness it needs. Enjoy!

I love my cast iron skillet. Something about cooking food in it makes it that much more delish! Heat bacon fat (or oil) in cast iron skillet. Add your onion and garlic, sautee until translucent.

Add your mushrooms, cook for 3 min.

Add your potatoes, and cook for 5 min on medium-high. Season with salt and pepper and basil.

Turn the heat down to medium-low, add your diced peppers and let cook on medium-low for about 30 min.

Stir occasionally until potatoes are cooked through and mushrooms are deep brown.

Add chopped parsley and serve.
