I love my cast iron skillet. Something about cooking food in it makes it that much more delish! I make several versions of this using sweet potatoes, butternut squash etc. Options are literally endless. I used bacon fat in this to add that deep delish,rich flavour. The parsley adds the freshness it needs. Enjoy!

Ingredients

4 servings
  1. 1 tbspplus 1 tsp of bacon fat (or olive oil)
  2. 5Or 6 medium potatoes, small to medium dices
  3. 1Bell pepper, diced large
  4. 4garlic cloves, roughly chopped
  5. 1 1/3 cupmushrooms, sliced thick
  6. bunchparsley, chopped (for garnish)
  7. 1onion, chopped
  8. salt and pepper
  9. 1 1/4 tspdried basil

Cooking Instructions

    Heat bacon fat (or oil) in cast iron skillet. Add your onion and garlic, sautee until translucent.

    Add your mushrooms, cook for 3 min.

  3. 3

    Add your potatoes, and cook for 5 min on medium-high. Season with salt and pepper and basil.

  4. 4

    Turn the heat down to medium-low, add your diced peppers and let cook on medium-low for about 30 min.

    Stir occasionally until potatoes are cooked through and mushrooms are deep brown.

  6. 6

    Add chopped parsley and serve.

Delicious! I had to use cilantro instead of parsley because that's what I had. Great with a few shakes of hot sauce top and even a fried egg would be perfect 🙂 #madethis
