
Roasted Pumpkin (Squash) Salad

Preheat oven to 375°F

Toss pumpkin (squash) in extra virgin olive oil and salt and put on baking sheet

Toss red onions in extras virgin olive oil and salt and put on separate baking sheet

Roast pumpkin (squash) and onions for 45 minutes
- 5
Purée sunflower seeds, olive oil, lemon juice, salt, and honey. (Add warm water to thin dressing as needed)
