Ingredients

  • 1 lbChicken Breast
  • 4 largeTortillas
  • 1/2 lbBacon
  • 4Jalapenos (fresh)
  • 1 bunchScallions (fresh)
  • 2 mediumTomatoes
  • 1 packagesCheddar Jack Cheese (half cheddar and half monterey jack)
  • 1Sour Cream
  • 1Salsa

Steps

  1. 1

    Cook chicken, let cool, then dice it and add to a bowl.

  2. 2

    Cook bacon crispy, let cool.

  3. 3

    Slice scallions and jalapenos and add to bowl with chicken.

  4. 4

    Dice tomatoes and add to bowl with chicken.

  5. 5

    When bacon is cool, crumble and add to bowl with chicken.

  6. 6

    Mix chicken, peppers, scallions, tomatoes, and bacon.

  7. 7

    Pre heat grill to medium heat.

  8. 8

    Add chicken mixture over half of the tortillas, cover with the cheese, then fold other half over.

  9. 9

    Do the same to the other 3 tortillas.

  10. 10

    Grill 2 to 3 minutes on each side.

  11. 11

    Serve with sour cream and salsa.

  12. 12

    Enjoy!
