Tailgater Beer Brats with Zippy Cheese Sauce

One of the few things that I miss about Cincinnati is quality made bratwurst. Hopefully I will find some here in Louisiana, but until then; I am stuck with Johnsonville. :-(
Tailgater Beer Brats with Zippy Cheese Sauce
One of the few things that I miss about Cincinnati is quality made bratwurst. Hopefully I will find some here in Louisiana, but until then; I am stuck with Johnsonville. :-(
Cooking Instructions
- 1
In a medium pot over medium heat, bring the 2 cans of beer to a low boil and boil the brats for 10 minutes and then set aside. If there is not enough room in the pot for all of the brats, do them in batches.
- 2
To make the cheese sauce, reduce the heat and let the beer come to a simmer. Whisk in the cream cheese and then the cheddar cheese. At this point the sauce will be thin. Add the worchestershire sauce and the horseradish. Continue whisking occasionally and let the sauce reduce to the desired consistency.
- 3
In a medium sauté pan over medium heat, melt the butter and add the onion, salt, pepper, bay leaf, and caraway seeds. Cook until the onions are translucent and then add the sauerkraut. Stir to combine and let the mixture slowly caramelize.
- 4
Throw your brats on the grill and let them brown.
- 5
Serve the brats on a bun topped with some cheese sauce and sauerkraut-onions.

Adapted from a recipe by the very talented British chef, Mark Hix. I only had Guinness in the house to make the sauce (red wine in his version) so it's become the main in my three course St Patrick's Day dinner. This serves one, but just multiply it by number you are feeding. Celeste

Sesame Fried Chicken Tenders with Special Cheese Sauce Sesame Fried Chicken Tenders with Special Cheese Sauce
I usually wrap chicken tenderloins with cheese in shiso leaves and fry them, but I wanted to try something different.By mixing the beaten egg with flour, the batter will coat the chicken properly.Put the panko and sesame seeds in a plastic bag, put the batter-coated chicken pieces in the bag and shake around to coat evenly without getting your hands dirty.Adding white sesame seeds the coating will make it very nutty and fragrant, and more nutritious too. Brad's homemade apple & beer bratwurst Brad's homemade apple & beer bratwurst
This is also something that I would do all the time when I raised pigs. I buy pre mixed seasoning packs from a company called Excalibur. These are easily found online from their distributor at Waltons. I have both hand seasoned, and used these in the past. In my opinion, these packs are the way to go. They come with everything you need. These are a quality product, and this helps get a consistent product every time. The seasoning packs are for 25 lbs of meat. I try for a 70/30 ratio of meat to fat. If you prefer to not use beer, substitute with the same amount of ice cold water. wingmaster835
