Thoroughly wash the potatoes and peel them.

After peeling cut of the round edges from the top and bottom of the potatoes to get even cut fries. Make sure all the fries are of the same thickness to enable even cooking.

Place the cut fries in cold water for 2 or 3 minutes and then pat them dry with a kitchen towel.

Heat oil in a wok and fry the fries in it for 6 to 7 minutes, turning them around in between so they cook on all sides.

Take out the fries on a kitchen towel to soak excess oil and sprinkle in the salt and pepper/chilli flakes and toss the fries to coat them.

Enjoy with your favourite sauce or dip.
