Ingredients

12 servings
  1. 2 tbspRed wine vinegar
  2. 2 tbspHot sauce
  3. 1 tbspVegetable oil
  4. 1 cloveGarlic (minced)
  5. 1 tspGarlic salt
  6. 2Avocados, firm and ripe
  7. 1 canBlack beans (15 oz.)
  8. 1 canWhite corn (11 oz.)
  9. 2/3 cupThinly sliced green onion
  10. 2/3 cupChopped cilantro
  11. 3Roma tomatoes, finely chopped

Cooking Instructions

    In small bowl mixing combine vinegar, hot sauce, oil, garlic, garlic salt, and pepper, mix well and set aside.

    Peel, pit, and cut avocados into 1/2 inch cubes. Place in a large bowl, add dressing and mix gently to coat.

    Drain and rinse beans and corn. Add beans, corn, onion, cilantro, and tomatoes to avocado mixture and gently mix to coat. Add salt.

    Serve with corn chips.
