melt 1 T butter in pan

sautee pepper, onion and garlic for about three minutes. remove from heat.

add cream, mustard, egg, parsley, pepper, and 1/2 cup bread crumbs. Mix well.

Gently fold crab meat into mixture.

Form 8 patties 1/2" thick.

In another bowl combine 1/2 cup bread crumbs and cheese.

Coat both sides of cake.

Refrigerate until firm.

Combine oil and 2T butter in pan over medium heat.

Sautee about three minutes each side until brown.

optional-bake for 8-10 minutes @ 400° instead of cooking on stove top.
