Ingredients

  • 1-10 ouncepackage frozen chopped broccoli, thawed and drained well
  • 1- large onion, chopped
  • 6- ounce cottage cheese
  • 1/2- stick margarine, melted
  • 4- eggs, beaten with 1 tsp salt
  • 1- box Jiffy Corn Muffin Mix

Steps

  1. 1

    Mix first 5 ingredients.

  2. 2

    Add Jiffy mix.

  3. 3

    Pour into greased 8"x 11" pan or casserole dish.

  4. 4

    Bake about 25 minutes at 400 degrees.

  5. 5

    Cool, then cut into squares.

  6. 6

    Keeps well in the refrigerator and can be easily reheated. Also freezes well.

  7. 7

    Also can use spinach instead of broccoli.
