Ingredients

  1. 1 cupPitted Dates
  2. 2 tbspLucuma Powder
  3. 1/4 cupCashew Butter
  4. 1 tspVanilla Extract
  5. 1/2 cupUnsweetened coconut flakes
  6. 1 pinchSalt
  7. 1/4 cupCoconut flakes for rolling

Cooking Instructions

    Soak the dates for 10 minutes in water to soften. Drain liquid, put dates in food processor to blend into a sticky puree.

    Add the remaining ingredients except rolling coconut and process until dough has formed. Add more coconut if to wet and more water if to dry.

    Place reserved coconut on plate. Roll the dough into 1 inch balls then roll in coconut and flatten with the bottom of a glass our palm of hand. Refrigerate until ready to serve. Makes about 2 dozen and lasts for 1 week.
