Ingredients

  1. 3/4 cupGranulated sugar
  2. 1/3 cupButter or margarine
  3. 3 ozCream cheese
  4. 1 tspRum extract
  5. 1Egg yolk
  6. 8 ozCandied pineapple, chopped small (I use a food processor)
  7. 1 1/4All-purpose flour
  8. 2 tspBaking powder
  9. 1/4 tspSalt
  10. 3 cupCoconut
  11. 1 cupCoconut

Cooking Instructions

    Preheat oven to 350?F.

    Cream together: sugar, butter/margarine, cream cheese, and rum extract.

    Add egg yolk, and chopped pineapple.

  4. 4

    Add dry ingredients: flour, baking powder, and salt. Blend until combined well.

    Add in 3 cups coconut.

  6. 6

    Cover and refrigerate for at least one hour.

  7. 7

    Shape into 1" balls. The dough is sticky, so hand rolling isn't easy. A cookie dough scoop works better.

    Roll balls into 1 cup coconut.

    Place on ungreased cookie sheet and flatten slightly.

    Bake at 350?F for 10-15 minutes.

    Remove immediately from baking sheet to cooling rack.
