Ingredients

Serves 4 servings
  1. 3.5 oztextured soy protein (100 grams)
  2. 1carrot
  3. 1/2medium onion
  4. 1 handfulfresh parsley
  5. 1egg
  6. 2 clovesgarlic
  7. 1/2 teaspooneach ground cumin, cinnamon, and turmeric
  8. 1 teaspoonsesame seeds (optional)
  9. 1/2 cupbreadcrumbs or crushed rolled oats (about 40 grams)
  10. Pink salt

Steps

  1. 1

    Soak the textured soy protein in water for 20 minutes. (You can find this soy protein at most grocery stores.)

  2. 2

    Chop the onion, carrot, garlic, and parsley.

  3. 3

    In a bowl, combine the drained soy protein with the chopped vegetables from step 2. Add the egg, spices, and breadcrumbs. Mix everything together.

  4. 4

    Shape the mixture into meatballs and bake for about 15–20 minutes.

  5. 5

    Serving suggestion: In a saucepan, heat crushed tomatoes with 1 teaspoon of Italian herbs. Serve the meatballs with the tomato sauce and a serving of brown rice.
