Classic meatballs, but made without meat. Instead, they use soy! They look like chicken meatballs and are more budget-friendly.
Steps

Soak the textured soy protein in water for 20 minutes. (You can find this soy protein at most grocery stores.)

Chop the onion, carrot, garlic, and parsley.

In a bowl, combine the drained soy protein with the chopped vegetables from step 2. Add the egg, spices, and breadcrumbs. Mix everything together.

Shape the mixture into meatballs and bake for about 15–20 minutes.

Serving suggestion: In a saucepan, heat crushed tomatoes with 1 teaspoon of Italian herbs. Serve the meatballs with the tomato sauce and a serving of brown rice.
