Shrimp Powder Fritters with Sesame Seeds
A traditional Lenten recipe served with nopales and mole. These were my grandmother’s favorites—she loved them with slices of Dominican plantain.

Separate the egg whites from the yolks.

Beat the egg whites until stiff peaks form, then gradually add the yolks.

Slowly add the shrimp powder while continuing to beat. Finally, add the spices, mix, and stop beating.

Gently fold in the sesame seeds with a spoon.

Heat enough oil or lard in a deep skillet. When very hot, fry the fritters by dropping spoonfuls of the mixture into the oil, like making buñuelos. Once golden on one side, flip, cook, and remove to drain.

Place the fritters in a colander to drain. Once drained, transfer to a plate until ready to use.

Serve with broth, mole, or your favorite sauce.
