Mix the chicken breast pieces with the herbs, salt and pepper. Fry chicken in a large frying pan, then place in the oven (180C - 10 min). Return the pan to a medium heat, add the mango and fry for 2 minutes, add sugar, vinegar, wine and ginger. Continue to fry for a further 2 minutes. Pour the mango sauce over the chicken.
