Ingredients

  • 3 canstewed tomatoes
  • 1 lbreal crab meat
  • 2pablano peppers
  • 2fresno chiles
  • 2bunches of cilantro
  • 2 clovegarlic
  • 1the juice of 6 limes
  • 1the juice of 3 lemons
  • 2 tbspbasil
  • 1salt and pepper to taste
  • 1 lbraw shrimp
  • 2granny smith apples

Steps

    In a large mixing bowl add the tomatoes and basil. Crush the tomatoes with your hands and strain out the excess juice

  2. 2

    Dice the chiles, cilantro, apple, garlic, and crab and add them too the bowl.

    Add the lime and lemon juice and the zest of 1 lime.

  4. 4

    Salt and pepper to taste

  5. 5

    real ceviche uses raw fish and seafood if you want to make it that way skip to step 7. If you want to eat it right away stop at step 6.

    Boil shrimp in salted water for 10 to 15 minutes until pink. strain them cut them in half and add them to the mixing bowl. Mix well cover with cling film and refrigerate for an hour

  7. 7

    Cut raw shrimp in half and any other raw seafood or fish. make sure the raw food is no bigger than 2 inch strips and at most 1/2 inch wide.

    Mix in the raw seafood, mix well to cover all the seafood with the ceviche juice. Cover with cling film and refrigerate for 24 hours. To make sure the fish and seafood is cooked by the citrus it will turn opaque.

    You can serve it in the mixing bowl and eat it with tortilla chips, or you can use tostada shells, spread a layer of sour cream on the tostada shell and top with the ceviche
