Cut the cauliflower, wash it, and fry it in oil.

Cut the eggplant and fry it.

Soak 2 cups of rice for 10 minutes with 1 tablespoon salt. In a pot, add 5 cups of water, curry powder, and bouillon.

Once it boils, add the rice and vegetables. Stir together, and when it boils again, reduce the heat.

Garnish with cashews.
