Great slightly lemony dish, fragrant with the smell and taste of Meyer lemons and fresh cranberries. I thought it will be quite tart, but it is quite balanced actually.

Ingredients

  1. 4large chicken thighs, skin on, bone-in
  2. 2table spoons olive oil
  3. salt and freshly ground pepper
  4. 1Meyer lemon, thinly sliced
  5. 1 cupfresh cranberries

Cooking Instructions

    Heat the oven to 325 degrees F.

    Heat the oil in a large ovenproof skillet over medium-high heat. Sprinkle the chicken thighs liberally with salt and pepper on both sides.

    Lay the chicken skin side down into the hot skillet. Cook without moving for 5-7 minutes, until the skin is golden brown and crisp.

    Turn the chicken thighs over and turn off the heat. Lay one beautiful slice of Meyer lemon on top of each piece of chicken. Scatter the remaining lemon slices and the fresh cranberries around the skillet.

    Slide the skillet into the oven. Roast the chicken for 50 minutes, until it is cooked through and the lemon slices on top have begun to caramelize. Remove the skillet from the oven. Serve immediately.
